Help with ‘79 25hp Evinrude mid range throttle

Hello, hoping to get a little help here. Motor runs great, typically fires right up after a couple bulb primes and away she goes. Spent last year overhauling lower, carb and lines etc. my issue is that at say trolling speed about 5mph on the fish finder she starts to sputter a little like it’s lean or rich. Can’t tell the difference if I back off the throttle a touch it smooths out.
I tried to go back and reset my low idle setting thinking I’m losing the higher speed jet’s benefits. Maybe I’m over thinking this but following j. Reeves instructions he mentions increasing rpms to where it just stays running after doing the 1 1/2 turns. Typically I’ve done this with my magneto advanced to where the cam roller on the carb is sitting right in the middle of the marks on the magneto. Should i instead try to find the sweet spot by retarding the timing before those marks? It seems to only want to run when the timing is advanced to those marks. I understand that right at those marks that is when the butterfly should begin to open and before that the butterfly is closed and adjustments before that point is just changing timing at the magneto.
